Oven-Baked Onion Bhajis
These oven-baked onion bhajis are a lovely, simple side to serve with our Chicken Tikka Masala. Crisp around the edges, soft in the middle and made with ingredients you’re likely to already have in your kitchen cupboard, they come together in around 20 minutes - just enough time to make while your byRuby Chicken Tikka is in the oven.
Ingredients
- 80g plain flour
- 1 tbsp medium curry powder
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1 tbsp tomato purée
- 2 eggs
- 1 large carrot, coarsely grated
- 2–3 onions, halved and thinly sliced
- 2 cloves garlic, finely chopped
- 2 tsp oil, plus a little extra for the baking tray
- Salt, to taste
- A Handful of coriander

Get the oven ready: Heat your oven to 200°C/180°C fan/gas 6 and lightly grease a baking tray.

Prepare the vegetables: Peel and finely slice the onions, then peel and grate the carrot. Finely chop the garlic and add everything to a large mixing bowl.

Add the spices: Add the plain flour, curry powder, cumin seeds, turmeric and tomato purée to the bowl with the onions, carrots and garlic. Give everything a good mix so the vegetables are evenly coated.

Add the eggs: Crack the eggs into the bowl and mix everything together until well combined.

Season: Stir through the oil, a good pinch of salt and some freshly chopped coriander.

Bake: Spoon the mixture onto the prepared baking tray, making roughly 12 small bhajis. Bake for 20–25 minutes, until golden around the edges and cooked through.
We served our onion bhajis alongside our Chicken Tikka Masala for a really easy curry night at home. The bhajis are perfect for scooping up the sauce, with a little yoghurt or chutney alongside if you have some in the fridge.
