Ingredients
- 2 cups rolled oats
- 2 mashed bananas (or 1½ cups frozen banana, thawed)
- ½ cup chopped raisins
- ⅓ cup dried apple, chopped
- 2 tbsp chia seeds
- ½ cup maple syrup
- 1 egg, beaten
- 1 tsp vanilla extract
- 2 tsp cinnamon
- A pinch of salt
- 2 tbsp milk
- 1 tbsp coconut oil, melted
Method
- Preheat your oven to 160°C fan and line a baking tin with parchment paper.
- Add all the ingredients to a large mixing bowl and stir until well combined.
- Leave the mixture to stand for around 5 minutes to allow the chia seeds to absorb some of the moisture.
- Transfer the mixture to the prepared tin and press down evenly.
- Bake for 30 minutes, or until golden and set.
These granola bars are perfect straight from the tin, packed into lunchboxes or enjoyed alongside a cup of tea for a simple afternoon treat.
