Flavoured Butters: Pilau Butter
There’s something magical about warm spices hitting a hot pan, that instant lift of turmeric, cumin and gentle sweetness that brings deep comfort to even the simplest dish.
Our Pilau Butter recipe captures that moment in seconds. Rich, fragrant and ready to melt into anything, it delivers effortless flavour every time. It’s also freezer‑friendly: slice it, stash it, and drop a piece into the pan whenever you need a quick aromatic boost.
We love stirring it through PACK’D cauliflower rice for a vibrant base, then serving it alongside our Chicken Tikka Masala.
Ingredients
- 1 onion, diced
- 1 tbsp oil
- 2 cloves garlic, chopped
- Pinch of chilli seeds
- 3 tsp cumin
- 3 tsp ground coriander
- 2 tsp garam masala
- 2 tsp turmeric
- 3 tbsp chopped fresh coriander
- Salt & pepper
- 250g softened butter
How to Make It
- Sauté your base: Heat the oil and gently cook the diced onion until soft and translucent — you want sweetness, not colour.
- Add the garlic & chilli: Cook for another minute until fragrant.
- Toast the spices: Stir in the cumin, coriander, garam masala and turmeric. Toast everything for a couple of minutes.
- Cool it down: Take the pan off the heat and let the mixture cool completely.
- Fold into butter: Once cool, mix the spiced onion mixture into your softened butter along with the chopped coriander. Season generously with salt and pepper.
- Roll & freeze: Spoon the butter onto a sheet of baking paper, shape into a log, roll tightly and freeze. Slice off rounds whenever you need a burst of flavour.
How We Used It
We served our Pilau Butter melted into PACK’D Cauliflower rice, a new one for us but such a good alternative to the usual sides. Top it with our Chicken Tikka Masala, and you’ve got a delicious dinner for two straight from the freezer!
Other Ways to Use Pilau Butter
- Melt over roasted vegetables
- Stir into lentils or chickpeas
- Finish grilled chicken or roast with fish
- Spread under the skin of a whole chicken
- Toss through warm flatbreads
