Flavoured Butters: Lemon & Garlic
Next up in our butter series is a bright, zesty staple to keep in your freezer; Lemon & Garlic Butter.
It’s incredibly simple to make, freezes beautifully, and adds a fresh, citrusy lift to everyday sides and cosy comfort dishes alike.
We’ve been loving it melted over PACK’D peas (so simple, so good) and served alongside our fish pie. A classic combo for a reason!
Ingredients
- 250g butter, room temperature
- Salt & pepper, to taste
- 1 head roasted garlic, cloves squeezed out
- Zest of 2 lemons
Method
1. Roast your garlic
Slice the top off a whole garlic bulb, drizzle with olive oil, wrap in foil, and roast at 180°C for about 35 minutes until soft, caramelised and sweet. Allow to cool, then squeeze out the cloves.
2. Make the butter
In a mixing bowl, combine the softened butter, roasted garlic, lemon zest, and a good pinch of salt and pepper. Mash until smooth and evenly mixed.
3. Roll & wrap
Transfer the butter onto a sheet of baking paper and roll into a log. Twist the ends to seal.
4. Freeze for later
Pop the log into the freezer. Once set, you can slice off a disc whenever you want a fast flavour boost.
