Ingredients:
- 125g salted butter
- 500g dark brown sugar
- 250g peanut butter
- 1 vanilla pod, seeds only
- 300g icing sugar
- 1/2tsp Maldon or flaky salt
Method:
Line a 30cm x 15cm tray with baking paper
Melt the butter slowly in a pan and stir in the brown sugar, ensure it is dissolved and bring to the boil for 2-3 minutes
Stir in the peanut butter and vanilla seeds with a wooden spoon
Sieve the icing sugar into a large bowl and pour the hot buttery, sugary mixture into the sugar - sugar on sugar (yum!)
Beat together and pour into the tray, spreading out evenly into the corners
Refrigerate until firm, sprinkle with salt and slice into cubes
