Claire & Milly's Frozen peach with maple caramel and Greek Yogurt

Peaches are at their sweetest and juiciest right now, making them perfect for this refreshing and easy pudding.

It's healthy and versatile, great for breakfast or as an after-dinner treat.  Masterchef Finalist Claire Fyfe  and our Co-Founder Milly worked this recipe together and it's been regularly enjoyed since then.

Creamy Greek yogurt topped with refreshing frozen peach, maple caramel and pecan nuts. 

What you'll need (serves 2):

  • 100ml maple syrup
  • 100ml extra virgin olive oil
  • 1 ripe peach frozen for minimum 3 hours
  • 4 heaped tbsp Greek yogurt
  • a handful of pecan nuts, crushed

 

Start by making the Maple caramel:

  • Whisk together 100ml maple syrup and 100ml olive oil until emulsified and thick (you can do this by shaking together in a jam jar if you prefer)
  • Dollop the yogurt into bowls and shave the peach on top using a Microplane grater. Drizzle with maple caramel and sprinkle with crunchy pecans
We were pleasantly surprised by how much the peppery extra virgin olive oil enhanced the caramel. You have to try this! This recipe is easily adapted for vegans by using coconut yogurt or another dairy alternative.
