Festive Freeze and Feast: Christmas Roasties
Over the next few weeks we will be sharing our freezer tips to prep ahead for Christmas dinner so you can make the most of the festivities.
We are starting off strong with arguably the best component of a Christmas dinner, the roast potatoes!
Ingredients (serves 6)
1kg Maris piper or other floury potatoes (peeled)
6 tbsp vegetable oil
Maldon salt or similar to serve
Method
Peel and chop the potatoes into large 2-3 mouthful chunks
Put them into a pan of cold water, cover with a lid and bring to the boil on the hob. Par boil for around 5-10 minutes until softening slightly around the edges.
Preheat the oven to 200C, pour the oil into a roasting tray and put into the oven for around 5 minutes until searing hot
Drain the potatoes into a colander and allow to stand and steam for a minute. Jiggle the potatoes around in the colander to roughen them up around the edges
Cautiously remove the hot oil from the oven, put onto a solid surface or the hob. Swiftly, pour the par boiled potatoes into the oil. Ensure you are careful to stay away from the hot oil, it can spit so wear thick oven gloves.
Now turn each potato in the oil and coat thoroughly
Roast in the oven and after 20 minutes check them and turn each potato over. Return to the oven for another 20 minutes until golden and crispy
Remove the potatoes from the oil onto a piece of kitchen towel and allow to cool
Label a freezer bag and when the potatoes are cool, transfer them to the bag. Freeze until you need them.
When you are ready to eat the potatoes. Preheat the oven to 200C. Remove the potatoes from the freezer and lay out flat on a baking tray. Roast for 30 minutes until crisp, serve in a warmed dish and sprinkle with sea salt
